If you're serious about baking authentic, crusty breads (bread recipe sample
) , real Neapolitan pizza and other traditional baked goods, a wood burning oven is a requirement.
The first Kilns date back to Ancient Egyptian times. These structures had two compartments separated by a stone slab. The lower part was used for the fire and the upper part was for cooking with the heat from the stone slabs.
The Greeks adapted the shape to a rounder, dome shape, with one chamber only. The Romans perfected this shape with an arched form to cook all food, but particularly bread, it revolutionized roman gastronomy. Thanks to Emperor Numa Pompilio festivals and parties called “fornacalia” were introduced. This ancient festival is still celebrated in some rural areas.
There has not been a great change in the construction of these ovens since roman times. In the early 1900’s the first pre-manufactured clay ovens were introduced, and today most people use the more portable, steel structured, wood burning ovens.
Tranquilli burning ovens are for outdoor use. The stainless steel or baked enamel roofs are weather resistant. They include a wood storage chamber, removable chimney, wheels and extractable handles for easier mobility. The ovens are available Baby or KTS80 versions with the difference only being with the variable length.
The ovens have 3 chambers. (1st) Upper chamber for cooking - (2nd) Middle chamber for burning wood - (3rd) Lower chamber for storage.
Tranquilli Baby wood burning oven for outdoor is ideal for smaller patio where space is limited. The cooking chamber made o AISI 304 steel, covered with polished steel panels, easy to clean and maintain is separated from the burning chamber to protect from smoke and ashes. It takes approximately 25 minutes to reach 400 degrees Celsius with 3 or 4 kilos of wood. The heat will stay constant for about 2 hours. We recommend, once the desired temperature has been reached, to lower the heat by closing the vent accordingly. Do not let temperature pass 450 degrees celsius.

Tranquilli KTS80 is larger than the Baby and features the same characteristics. Its sizeable cooking chamber enables you to cook pizza on the stone while roasting meat and vegetables on the higher racks. Ideal for entertaining this unit is an extension of your kitchen for your outdoor cooking.We recommend, once the desired temperature has been reached, to lower the heat by closing the vent accordingly. Do not let temperature pass 450 degrees celsius.
